I was wondering if anyone had a take on the weight that sits under the pinion on the 8.8 differential case?

I believe it is a vibration dampener, correct me if I am wrong. I have read in a few places that it is "tuned" to the differential gear set that the differential originally came with. I don't really buy that but.... I don't know. I have changed the gear set to several different gear ratios, from 2.73 to 4.10 and settled on 3.55 for now.

It is a big chunk of steel for un-sprung weight. It is really necessary to reduce gear harmonics or is it more for ride quality?

That is called the dog bone. it is suppose to dampen vibrations from the STOCK gears.
taking it off has no ill effects.

That is exactly right.  Once you change the gear the purpose it served is useless
